Let’s make Easter Bunny Cupcakes.
Listen. We can do this. You can do this. In the middle of stay at home (Covid19), you deserve something not complicated that might just bring you and your family immense joy.
Details. You can make your cupcakes from scratch or from a box. Frost your cupcake with a light frosting so do not forget to buy frosting. If frosting is sold out, you can always beat cream cheese with some vanilla and sugar (Yes, sugar. So, yes, it will be just fine).
For the eyes and nose: I used M&Ms for the eyes and a sour ball for the nose. Walk through your candy aisle and you can use anything. Really.
For the whiskers: I used sugar sprinkles. I have also used in the past, little strips of red licorice (I bought regular Twizzlers and cut very thin strips and made them short enough; just press into frosting).
For the mouth: I had chocolate chips. Melted some in a bowl in the microwave (few seconds at a time). Put the melted chocolate into a plastic bag and snip a very small corner of the bottom of the bag. You will gently squeeze out to make the mouth.
For the ears: I made them out of paper. Once you have them cut out and ready to place into frosting, you can lay them straight out and back or when you press them into the frosting, you can press them forward a little bit. Play around a little and see what you like.
Remember, this is for joy.
Plus, I felt like a couple of mine looked like cats and I was okay with that too.
Tip. Wait for it- if you do not want to bake, BUY the cupcakes already frosted from the store. Yes, you heard me right. When you get home, smear the frosting off, mix it up in a bowl. You or the kiddos can use the frosting to frost the cupcakes. Why? Well one, if the frosting has sprinkles or such, it take away from the bunny face details. So smear it off and blend it (not too long as sprinkles may color the frosting). But either way, this will blend and make a fun frost for you to frost the cupcakes. Second reason- this just made life much easier!
